Cucumber, Coconut, Lime and Mint Cooler
This has to be one of the most delicious (and simplest) refreshers to make. Throughout this epidemic, it has become evident that our Summer will most likely not be spent outside, so long as the shutdown is put in place to save the lives of others and ourselves.
However, that doesn’t mean you can’t imagine you’re at the beach with a nice refresher in hand? If you’re a fan of limes and mint, this refresher is definitely for you.
It is super simple to make during this quarantine, and I personally enjoy it after a workout to replenish my body (You can even try this refresher after my 80s workout)
4 cups of coconut water
2 cucumbers sliced very thinly
.5 cup of lime juice
.25 cup of sugar (optional)
.25 cup of chopped mint leaves
Step 1: Combine coconut water, cucumbers, lime juice, sugar and mint leaves.
Step 2: Let chill for 1 to 2 hours.
Step 3: Serve as cooler mocktails and garnish as you like.
Step 4: Enjoy!
